Vegetarian Red Beans and Rice — slow cooked with the Cajun trinity of onions, celery and peppers. Jammin' Jambalaya — smoked chicken, pork and andouille sausage, simmered with caramelized veggies, spices and rice. Seafood Gumbo — a dark roux thickened stew with shrimp, oysters, veggies and file.
Crawfish Etouffee — a spicy stew with onions, green peppers, tomato and herbs smothered with crawfish and served with white rice.
